Easter Stuff

 I got crafty this week with the kids. These are little tambourines, full of dry beans. I tried using refried but it didn't make any noise. I guess the noise only comes from those when you eat them...har har har.
 We went to Holy Thursday mass and it was helpful to do crafts to explain the importance of the Last Supper to the kids. Details that I tell them really stick in their minds; Olivia's even quoting scripture :)
 Then I made this strawberry pie. It was really good. Simple recipe--the crust was really delicate though so it didn't cut neatly. The filling was just sliced strawberries that we chilled in the fridge with sugar.
 I really need to get a rolling pin...see my soy-sauce wrapped in saran? :P



 I also made these lumpia egg rolls, which didn't last the night. I am making more for Easter tomorrow when Tim & Teresa come over.
 Had to go to the asian market to get the right wrappers---they are really thin.The filling is pork, cabbage and carrots. I forgot to get the water chestnuts--those are my favorite.
 Delicious with sweet chili sauce!

More cooking tomorrow--it's fun to host dinners! And we are excited to celebrate Jesus' Resurrection tomorrow! We decided to explain to the kids that the easter bunny is just a fun idea to celebrate Easter, but that it's really about Jesus. We still got them baskets and goodies and will have an egg hunt, but I just didn't want them to believe in a fictional bunny, that has no connection to Jesus. Lucas had already asked "wheres the bunny? is he Jesus' friend?" when we watched Jesus of Nazareth :P
